6 eggs (2 are for coating)
2 cups Panko bread crumbs
2 cups flour
1 lb ground sausage
water and ice (for ice bath)
frying oil (vegetable works best)
Directions
Beat 2 eggs and put into a bowl (for coating). Place Panko into a separate bowl.
Hardboil 4 eggs (place eggs in pot, fill with water to 1 in above eggs, bring to rolling boil, turn off heat, cover, let sit for 10 minutes)
Place eggs into egg bath
Peel eggs under running cold water, then place back into egg bath
Wrap eggs in ground sausage (make sure you cannt see any of the egg)
Roll the sausage ball in the egg wash bowl.
Transfer to Panko bowl and cover, then set aside
Fry balls in oil in 375° for 7-10 min (internal temp should be 175° or so).
Remove from oil onto a paper towel lined plate and let cool for 5 minutes
