Lemon Glazed Cookies
Incredients
2 ¼ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup granulated sugar
2 tablespoons fresh lemon zest
1 cup (2 sticks) butter
1 large egg
1 teaspoon vanilla extract
1 cup powdered sugar
4-5 tablespoons fresh lemon juice
Directions
Preheat the over to 350° F
Combine Flour, Salt, and Baking Powder in a bowl. Whisk and set aside
In a small bowl, add sugar and lemon zest. Rub together until fragrant
Beat butter and sugar/lemon mix until light and fluffy. Beat in the egg and vanilla extract until smooth
Slowly beat in flour mixture on low speed until blended
Drop dough via tablespoon onto cookie sheets spacing 2 inches apart. Gently flatten with the palm of hand
Bake 12-14 minutes, or until cookies are set and slightly golden brown. Cool on cookie sheet for two minutes, then transfer to cooling rack
In a medium bowl, whisk glaze together. Dip top of cookies into the glaze, then allow glaze to set
